Traditionally made for Easter, this light fruit cake contains a hidden layer of marzipan and is decorated with another on top, together with 11 mini balls representing the true disciples of Christ.

Also given as a gift for Mothering Sunday by daughters of the household. 

Cake Ingredients: Mixed vine fruit (sultanas, currants, raisins & sunflower oil), white wheat flour, butter (milk), soft brown sugar, mixed citrus peel (orange peel 46%, glucose-fructose syrup, lemon peel 11%, sugar, preservative: E202, E220 sulphur dioxide, acidity regulator: E330), egg, mixed spice (ground cinnamon, coriander, ginger, nutmeg & cloves), ground nutmeg, salt, lemon zest.

Marzipan (ground almonds, caster sugar, egg): Topping: Apricot jam (sugar, apricots, citric acid, Pectins).
